- Yellow Tomato - Sliced Paper thin - 4.5 oz
- Crispy Serrano - Broken into medium size pieces - .25 oz
- Chopped Marcona Almonds - .5 oz
- Sherry Bellota Vin - 1 oz
- Pickled Shallot - 10 g
- Micro Sorrel - 5 g

procedure
- On a large round plate, spoon the mita crema on and spread it evenly to about an inch away from the edge of the plate
- Layer the tomato slices neatly around the plate in carpacio format
- With a torch, char the tomato slices until carmelization forms evenly across the tomato
- Drizzle the sherry bellot vinagrette across the tomato
- Top with the broken crispy serrano pieces (6-8 pieces), pickled shallots, chopped marconas
- Garnish with micro sorrel
