PROCEDURE
- Slice serrano paper thin as you would for service.
- Place serrano slice on a sheet pate lined with parchment paper
- Bake in the oven at 375 for 5-6 minutes, LOW FAN
- Remove from oven and store in a plastic 1/6 pan
- Label, and reserve fro service at room tempature
CRITICAL CONTROL POINT
- Slices should not be shredded. They should be full and intact
- Serrano SHOULD NOT have any burnt flavor to it. it should be very crispy and salty
