8.5 Liters White wine
3.25 Liters Gin
5 Quarts Watermelon Juice
1.7 Liters Lemon Juice
2 Quarts Basil Syrup
1 heaping coffee spoon of Maldon salt (*not a dinner spoon!)
For the watermelon juice:
Take 1 large watermelon, cut in to small chunks and puree. Strain off in to quart containers, label and date.
For the watermelon garnish:
Cut one whole watermelon in to slices and then in to rectangular pieces (approximately 1 ¼” wide and ½”- ¾” thick). Then cut small squares,
approximately 1 ¼”. Store in quart containers, label and date
Combine above ingredients and mix thoroughly.
Pour in to quart containers, label, date, and store refrigerated.
At the time of service:
Shake the quart container briefly to mix, the batch separates quickly
No soda top*
Garnish: watermelon pieces and a sprig of basil (sprig or one large leaf)
