50g white chocolate dipping sauce (2oz ramekin)
50g dark chocolate dipping sauce (2oz ramekin)
25g mulit-colored sprinkles (2oz ramekin)
White Chocolate Dipping Sauce
Yield: 700g (3/4 quart)
675g whole milk
275g white chocolate chips
10g vanilla paste
2g kosher salt
Slurry:
20g cornstarch
50g water
1. Combine the milk, vanilla, & salt in a medium pot & bring to a boil.
2. Put the white chocolate in a large bowl.
3. Pour the hot milk over the white chocolate.
4. Whisk the milk & chocolate to smooth.
5. Combine the cornstarch & the water to make a slurry.
6. Whisk the slurry into the white chocolate mixture. Return the mixture to the pot.
7. While whisking continuously, bring back to a boil to thicken. Be careful not to burn the white chocolate.
8. Remove from the heat & cool.
