7 dl. Milk
5 dl. Heavy cream
1 vanilla bean
1 cinnamon stick
Bring all of this up to a simmer, mix and strain.
9 Egg Yolks
250g Sugar

Mix these together.  Temper the egg mixture and whisk in the milk. Over a Bain-Marie cook the mixture until a sabayon is reached.
