Sweet dates are paired with smoky and crispy bacon, and a bold blue cheese from Spain. The almonds add a nice bit of texture. 3 pieces per order.

3 Medjool dates; 60g each
3 Marcona Almonds: 10g each
3 half teaspoons Valdeón cheese: 20g
3 half strips smoked bacon: 35g each (approximately 5" long)

procedure
Remove the pits from the dates by slicing into one side of the date, so that the date resembles a clam shell.
Put 1 half teaspoon of Valdeón cheese and one Marcona Almond inside each of the dates, then close each back together.
Wrap each date with one strip of bacon.
Put one date on a skewer
Service
Deep fry one skewer of dates at 375ºF until brown in color.
The bacon should be cooked through, but be careful not to burn it.
Plate as directed for passed service
