  • 1 whole egg, sunny-side up
  • 1 TBSP Extra Virgin olive oil
  • 5 oz Skirt Steak
  • 1 tsp Kosher Salt
  • .5 tsp Cafe grind Black Pepper
  • 1 oz Mojo Verde
  • 2 oz Brava potato
  • 1/4 tsp Maldon

procedure
  1. Season and sear the skirt steak on the flat top using the same recipe as the Entrańa a la Parrilla
  2. Fry 2 oz of brava potatoes, season with pimenton and salt as usual
  3. Lightly fry 1 egg in extra virgin olive oil on very low heat to sunny side up
  4. Place bravas in oval deep dish (no sauce, no aioli)
  5. Slice the steak into equal slices and layer over potato
  6. Top steak with mojo verde then top with sunny side egg
  7. Finish with maldon salt.

  • Rest the steak so that it does not bleed all over the plate.  
  • Make sure your potatoes are well seasoned with pimentón and salt
  • Don’t overcook your egg
