A hearty winter salad. The sweetness of the pears and sherry vinaigrette balance the bitterness of the radicchio perfectly. Hazelnuts add great texture. And Manchego cheese makes everything better.

ingredients
- Radicchio cut in four and then in 3 parts - 3oz
- Pear 1/4 inch sliced. - 1 oz
- Manchego cheese shredded - 1/2 oz
- Fried Hazelnut rough chopped - 1/2 oz
- Vinaigrette del momento - 1 oz
- Kosher Salt - 1/8 tsp
- Fresh ground black Pepper - Garnish

procedure
- Add dressing to mixing bowl
- Add radicchio to dressing first, then pears, hazelnuts, manchego and salt, and toss well
- Plate salad into large oval bowl ensuring that hazelnuts and pears do not fall to the bottom of the plate
- Garnish with fresh black pebber
critical control points
- Before service take the 1/4 heads of radicchio and soak in ice water then dry
- Remove the inside of the pear and cut thin but not paper thin, you want a little crunch in the salad
- Use a microplane or zester to grate the manchego very thin
- Hazelnuts should be lightly fried until golden brown, rough chopped, and lightly salted
