1kg blueberries, washed

140g granulated sugar

50g lemon juice

50g water

10g cornstarch

procedure
  1. Wash blueberries & pick out any stems.
  2. Combine the blueberries, sugar, and lemon juice in a medium sauce pot.
  3. Combine the water and the cornstarch in a small bowl. Stir to dissolve the cornstarch.
  4. Bring the berries/lemon/sugar to a simmer to fully dissolve the sugar. Stir & continue to simmer until the blueberries just start to pop.
  5. Add the cornstarch and water mixture to the blueberries.
  6. Bring the mixture back up to a simmer, cook out the raw cornstarch flavor & the mixture will thicken.
  7. Cool the blueberry compote.

Yield: 1.1kg

critical control points

Do not boil the blueberries to nothing, you want to have some whole blueberries.
