300g chopped chorizo palacios

40g extra virgin olive oil

PROCEDURE
  1. Put the extra virgin olive oil & the chopped chorizo palacios in a small pot. (see photo)
  2. Set over medium heat and render the fat from the chorizo.
  3. You will not cook to completely crispy, but some smaller pieces will crisp slightly. (see photo)
  4. Reserve WARM for service in a small bain.
