- 2.5 ounces Manchego Cheese

PROCEDURE
Grate the Manchego cheese
Using a tablespoon, equally portion out 10 circles of grated Manchego on to a silicone pad
Spread the Manchego out evenly until flat and circular to about 3 inches wide
Bake the Manchego in the oven at 375 degrees, low fan, no humidity for 7 minutes
Remove from oven and let cool
Portion into an air tight container (pint container)
Label and reserve for service
CRITICAL CONTROL POINT
DO NOT use a microplane to grate Manchego as it will be to airy and not be the appropriate thickness after cooking
USE the medium size holes on the box grater
Cook to golden brown, anything more gets bitter!
If your oven is hotter than 375º when you put the crisps in, it will cook fatser than 7 minutes.
