In a metal shaker place the following:
3 kumquat halves
3 heavy dashes aged citrus bitters Muddle ingredients briefly
Add:
2oz batched rum blend
.5oz preserved lemon syrup
.5oz lime juice
Add ice and shake vigourously
*you will need to shake longer than other cocktails, due to the thicker syrup, otherwise the cocktail will be too tart
Double strain in to a Nick & Nora specialty glass
Garnish: skewer with 2 pieces candied kumquats
1. In a quart container mix
16 ounces Flor de Caña white rum
16 ounces El Dorado 8yr aged rum
2. Label and Date container. This recipe will yield 18 cocktails
3. Transfer to speed pour or bottle prior to service - this should be stored in the speed rail. Label and date.
