This Mojito is built in the glass (no shaking required!):
2 wedges of pineapple
8 mint leaves
.5oz demerara syrup
Combine the above ingredients in a tubo glass, then muddle briefly
Add:
2oz Flor de Cana Extra Dry white rum
1 oz fresh lime juice
Top with soda water (approx 2.5oz) and ice
Stir with a bar spoon to incorporate ingredients and chill
Garnish: no garnish necessary. If you have time, a full mint sprig can be used to garnish.
