Margarita de Rosas

The "Margarita de Rosas" was created by guest mixologist, Mark Tubridy. Mark has worked for some of the city's most iconic bars and restaurants and is currently at one of the country's most beloved former speakeasies, the 21 Club. Pomegranate adds a fruitiness to this margarita that's still appropriate for winter while the Lillet Rosé and a rosewater spritz bring beautiful aromatics to the drink. Make sure your pomegranate seeds are fresh. That may mean bringing in actual pomegranates instead of the seeds in a cup so that they last longer.

Simple Syrup

RECIPE FOR COCKTAIL

In a shaking tin, combine:
- 2 oz Cazadores Blanco or Pueblo Viejo Tequila
- .5 oz Lustau Rosé Vermut
- .5 oz Simple Syrup
- .25 oz Pomegranate Juice
- 1 oz Lime Juice

Shake to incorporate and chill
Strain into a rocks glass filled with fresh ice
- Spritz once with rose water

Garnish: Fresh pomegranate seeds

In a shaking tin, combine:
- 4 oz Batch

Shake to incorporate and chill
Strain into a rocks glass filled with fresh ice
- Spritz once with rose water

Garnish: Fresh pomegranate seeds

PITCHER

In a SMALL 1L pitcher:

- Fill with ice (about 1 quart)
- Add 6 oz Batch

In a shaking tin, combine:
- 6 oz Batch

Shake to incorporate and chill
Strain into pitcher over ice and batch

Garnish: Fresh pomegranate seeds in the pitcher
- Spritz each glass with rose water

- 8 oz Lime Juice
- 4 oz Simple Syrup
- 4 oz Lustau Rosé Vermut
- 2 oz Pomegranant Juice

Yield: 34 oz (a VERY full quart)
