Island Old Fashioned

An old fashion built for summer nights. This cocktail marries two styles of rum (Spanish, cane molasses based, and French cane juice based) in a spirit forward cocktail that also makes us think of more tropical climes with a hint of ripe banana and hard spice (tiki bitters). While the drink has some heat at first, a little dilution from the iceslowly melting actually enhances the cocktail, turning it layered and very balanced.

RECIPE FOR COCKTAIL

In a  mixing glass, combine:      

8 drops Bittermens Tiki  bitters    

2.4 oz Batched spirit mix      

stir for at least 20 seconds  to incorporate and chill properly        

Strain in to a sangria bucket  glass and fill with ice.        

Garnish: orange peel &  lemon peel

RECIPE FOR BATCH

In a quart  container mix     

          18 ounces  Neisson      

           6 ounces El  Dorado 8yr      

          4.5 ounces  Giffard 'Banane'    

Label and Date container. This recipe will yield  12 cocktails    

Transfer to speed pour or bottle prior to service  - this should be stored in the speed rail. Label and date.
