Chicago Spring Gin Tonic - Elderflower Orange

In a Copa/globe wine glass, combine the following:

- Fill glass 2/3 with ice
- 1.75 oz BCN Gin
-.25 oz St. Germain
- 2 dashes Fee Brothers West Indian Orange Bitters

Stir briefly to incorporate then add:

- 4 oz Fever Tree Elderflower Tonic

Garnish: Orange peel, ignite the oils over the drink and then drop the peel in the drink
