RECIPE FOR COCKTAIL

In a Copa/globe wine glass, combine the following:

- Fill glass 2/3 with ice
- 2 oz BCN Gin
- 2 oz Charred Grapefruit Puree
- 4 oz Fever Tree Tonic

Stir briefly to incorporate
Garnish: Charred Grapefruit Quarter Wheel

RECIPE FOR BATCH

Charred Grapefruit Puree

  • Char whole grapefruit on the stove top over open flame for 8 minutes, 2 minutes on each side, rotating it
  • Peel the grapefruit, puree in a blender, and strain

Yield: 8oz, 4 grapefruits make about 1 quart

Charred Grapefruit Garnish

  • Cut grapefruit slices into quarter wheels
  • Char them with a torch
