In a Copa/globe wine glass, combine the following:
- 2 oz Mahón Gin
- .5 oz Lemon Juice
- 1.5 oz Ginger Butterfly Pea Flower Syrup
- .25 oz St. Germain Elderflower
Fill glass 2/3 with ice and top with Gun tonic
Stir briefly to incorporate
Garnish: a teaspoon of butterfly pea flower and lemon wheels
Ginger Butterfly Pea Flower Syrup
Combine all ingredients in a saucepan and simmer on low/med for 10 minutes.
Remove from heat, strain out the ginger
While still hot, add:
Steep for 2 minutes than strain out butterfly pea flowers
Yield: 1/2 quart
