Use the steam wand on the espresso machine to heat up 3 oz of batched Seedlip & Spiced Syrup. Pour .5oz lemon juice into the Kiln Mug and add the hot cocktail batch. Fill the mug to the top with hot water from the espresso machine (approx. 7.5 ounces per cocktail). Garnish with Star Anise & a lemon peel
Honey / Spice Syrup Recipe:
In a quart container, combine .5 cup sugar-in-the-raw, .5 cup honey and 1 cup boiling or hot water. Use water from the espresso machine as this will create the right amount of heat to mix thoroughly. Add two tablespoons allspice berries, 1 tablespoon white peppercorns, 2 pieces star anise. Stir until mixed well and cover. Infuse for 3 hours and then strain.
