Founded in 2006, this winery has become one of the most talked about projects in the Canary Islands. The vineyards are planted on on volcanic soils – literally planted on the side of the Volcano Teide. While the north of the island is dry, tradewinds bring moisture to the land. “7 Fuentes” refers to the 7 vineyard plots from where the grapes are sourced. Vine age is a blend, most 40-60 yr old, some young and some nearly 100 yrs old. This is an incredible expression of the Listán Negro grape and the unique soils of this wine region.The grapes are fermented in stainless steel and aged in cement and older barrels in order to preserve freshness and purity of fruit, rather than oak influence. The nose is tight, with volcanic rocks and earth overpowering the layered tart red fruits. The palate is loaded with minerals in a perfect medium weight, with acid driving through to a persistent finish.
