The extended aging of the Imperial Cava makes for a wine with rich white fruits and sweet fennel, developing in to a complex wine that is incredibly delicate and graceful, unlike much of Cava production. Truly a rarity in the world of aged wines.

The Gramona family has been in the Cava making business since the early 1800s, finally producing their own Cava under the Gramona name in 1921. The Cava house (one of the few family-owned left) is one of the oldest and most respected, also leading the way in organic/biodynamic farming and renewable energy use. They have a deep commitment to

biodynamic farming, believing healthy vineyards and grapes are the foundation for the best wine.

What sets Gramona apart, though, is time. There is no urgency to rush Cava to the market, often aging their wines much longer than required by law. The wines are only released when they reach their optimum potential. In the case of their flagship wine, ‘Imperial’, it is aged for 60 months! 5 years of aging and development takes bright, structured fruit and creates layers of depth, elegance and finesse.
