Hibiscus Strawberries

1 bag whole frozen strawberries (10lb) - Order through Baldor: Item BE996. Do not order organic strawberries – super expensive!

2 quarts hibiscus simple syrup

Take one bag frozen strawberries and thaw. Drain off any excessliquid from bag of strawberries. Cut strawberries in quarters (more pieces if they are extra large).

Make two quarts hibiscus simple syrup: In a quart container, add 2 cups white sugar(1/2 container)and 4 oz (one 4oz aluminum cup full) dried hibiscus. Add hotwater, stir and cover. Let sit for 30. Strain off hibiscus and setaside. Discard the hibiscus.

In a large fish tub, combine the strawberries and hot hibiscus simplesyrup. Let sit overnight (min. 8 hours).

The next day, divide in to quart containers, label and date.
