Take 14-16oz fresh ginger root
Using a spoon, scrape off the peel of most of the ginger. Remove 90-95% of the peel so the flesh is exposed while cooking. Cut in to slices and set aside.
In a pot, bring 4 quarts of water to a boil. Add 2.5 quarts of WHITE sugar.
Add the ginger and stir thoroughly to dissolve the sugar. Bring back to a boil and then reduce heat to simmer.
Cook for 1 hour then remove from heat and let cool for 15 minutes.
Strain off the pieces of ginger and let completely cool. Batch in quart containers, label and date.
