Juice one pound of sweet peas and double strain using a cheesecloth. The amount of juice you get from the sweet peas will vary, so after you juice the peas, weigh the resulting liquid. Add half of the weight of the sweet peas worth of lemongrass syrup, and blend for a few minutes at medium speed. Add 1 tsp citric acid per 1000 g of sweetpea syrup, then blend on low speed for 1 min.
